About the Recipe

Craving something elegant, healthy and incredibly fast? This 15-minute garlic shrimp scampi with zucchini noodles is the perfect solution.

This light and flavorful dish captures the classic taste of scampi garlic, butter, lemon and a hint of white wine, but swaps traditional pasta for fresh zucchini noodles, making it a fantastic low-carb, high-protein meal. It's a restaurant-quality dish you can whip up on a whim.

Instructions

  • Prep Shrimp and Zucchini: Pat the shrimp completely dry with paper towels and season with salt and pepper. If you haven't already, spiralize your zucchini.
  • Sauté the Aromatics: In a large skillet, melt the butter with the olive oil over medium heat. Add the sliced garlic and red pepper flakes and cook for 1-2 minutes, stirring constantly, until the garlic is fragrant and lightly golden. Be careful not to burn it.
  • Cook the Shrimp: Add the shrimp to the skillet in a single layer. Cook for 1-2 minutes per side, until they are pink and opaque. Do not overcook.
  • Create the Sauce: Pour in the white wine (or broth) and lemon juice to deglaze the pan, scraping up any flavorful bits from the bottom. Bring to a simmer and let it cook for 1 minute.
  • Toss with Zucchini Noodles: Add the zucchini noodles to the skillet. Toss everything together for 1-2 minutes, just until the zucchini is heated through but still crisp-tender. You don't want to cook them for too long or they will become watery.
  • Finish and Serve: Remove the skillet from the heat. Stir in the fresh parsley. Taste and adjust seasoning with more salt, pepper or lemon juice if needed.
  • Serve immediately!
