This naturally vegan and gluten-free soup is a nutritional powerhouse, loaded with plant-based protein, dietary fiber and a rainbow of vegetables. It's an incredibly budget-friendly meal that’s simple to make and perfect for a chilly evening. One pot is all you need to create this thick, satisfying soup that will leave you feeling warm and energized.

Instructions

  • Sauté the Mirepoix: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots and celery (this combination is known as a mirepoix). Sauté for 6-8 minutes, until the vegetables have softened.
  • Bloom the Aromatics: Add the minced garlic and cook for another minute until fragrant.
  • Combine Ingredients: Add the rinsed lentils, vegetable broth, diced tomatoes (with their juices), dried thyme, rosemary and the bay leaf to the pot.
  • Simmer the Soup: Stir everything together and bring the soup to a boil. Once boiling, reduce the heat to low, cover and let it simmer for 40-45 minutes or until the lentils are tender.
  • Wilt the Spinach: Remove the bay leaf. Stir in the fresh spinach and cook for just 2-3 minutes more, until the spinach has wilted into the soup.
  • Season and Serve: Season generously with salt and pepper to taste. Ladle the hot soup into bowls. It's delicious on its own or served with a side of crusty whole-grain bread for dipping.
