This high-protein, low-carb meal is loaded with a delicious mix of textures and flavors. Perfectly seasoned grilled chicken and creamy avocado provide a healthy dose of lean protein and monounsaturated fats, while black beans and corn add fiber and a Southwestern flair. It's all tossed in a simple, zesty cilantro-lime vinaigrette for a fresh and filling meal.
Instructions
- Prepare the Chicken: Preheat a grill or grill pan to medium-high heat. Rub the chicken breasts with olive oil and season them evenly on all sides with chili powder, cumin, salt and pepper.
- Grill the Chicken: Grill the chicken for 6-8 minutes per side or until cooked through (internal temperature reaches 165°F / 74°C). Remove from the grill and let it rest for 5-10 minutes before slicing.
- Make the Vinaigrette: While the chicken is cooking, prepare the dressing. In a small bowl, whisk together the olive oil, lime juice, cilantro, optional honey, salt and pepper.
- Assemble the Salad: In a large salad bowl, combine the mixed greens, black beans, corn, cherry tomatoes and red onion.
- Combine everyting together: Slice the rested grilled chicken. Add the chicken and the diced avocado to the salad bowl. Drizzle with the cilantro-lime vinaigrette and toss gently to combine.
- Serve immediately!
